At the Edge: Indonesian Cuisine in Conversation at Jingga

A Gathering of Cuisine, Ideas and Conversation

An evening shaped by food, stories and thoughtful conversation, At the Edge: Indonesian Cuisine in Conversation brought together different perspectives on Indonesian cuisine at Jingga, Bumi Kinar, as part of the Ubud Food Festival.

The gathering brought together chefs and creative minds including Glenn Erari of Semaja, Dick Derian and Made Masak, each offering a distinct perspective shaped by their culinary backgrounds and connections to Indonesian heritage. Glenn Erari drew from his Chinese Bangka and Papuan heritage, while Dick Derian explored the bold flavours of East Java through a contemporary approach. Made Masak brought the depth and character of Balinese cuisine to the table.

The conversation continued beyond the kitchen, with Oliver Truesdale Jutras sharing perspectives shaped by his experience in international kitchens and regenerative thinking. Bram Hendrata, CEO of Ismaya Group, offered insights from his experience in Indonesia’s hospitality and lifestyle industry, with the discussion moderated by Edward Spiers.

Around the table, the atmosphere at Jingga felt warm and relaxed. Conversations unfolded naturally between dishes, creating an intimate setting for exchanging ideas, stories and perspectives on the past, present and future of Indonesian cuisine.

A welcome drink by Semaja Bar opened the evening, followed by canapés and a six course dinner prepared by the participating chefs. Cocktails curated by Semaja Bar accompanied the dining experience, adding another layer to an evening centred around Indonesian flavours and creative expression.

More than a dining experience, At the Edge created a space for food and conversation to exist side by side. Different culinary backgrounds, ideas and interpretations came together, offering a thoughtful reflection on the many ways Indonesian cuisine continues to evolve while remaining connected to its roots.

Jingga at Bumi Kinar was honoured to be part of this Ubud Food Festival gathering, bringing together good food, meaningful conversation and the people behind the ideas.
